
White Chocolate Pumpkin Bars
It's pumpkin time and because of my love for almost everything pumpkin flavored, I created this delicious white chocolate pumpkin bar recipe.It is a cross between a chewy cookie bar and a dense sweetbread. To make it even sweeter, you can add a cream cheese frosting or drizzle with a cinnamon icing made from powdered sugar, water, and ground cinnamon.Or, you can do as I did and eat them straight from the oven!
Equipment
- 8×8 baking dish
Ingredients
- 1 cup flour
- 1/2 cup self rising flour
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1 egg
- 1/3 cup vegetable oil
- 1/2 cup sugar
- 1/4 cup brown sugar packed
- 1 cup pumpkin puree canned
- 1 cup white chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Line 8×8 baking dish with no-stick foil.
- Into bowl of a stand mixer, add: egg, oil, and sugars.
- Mix on medium speed until combined.
- Add pumpkin and mix well, scraping down sides if needed.
- Add flours, baking powder, and cinnamon. Mix well and scrape if needed.
- Add chips and mix until combined.
- Pour into prepared dish.
- Bake for 50 to 55 minutes, until center is baked through.
