Pumpkin Cheesecake Recipe

Autumn and pumpkins go hand in hand. One simply can not go through the fall season without baking SOMETHING with pumpkin flavor, such as this pumpkin cheesecake recipe.
Here is a creamy, sweet, pumpkin filled treat that your friends and family with rave about. Adding the ground cinnamon and pumpkin pie spice adds to the coziness of the season and fills your home with a magnificent scent.

Ingredients
  

  • Crust:
  • 3/4 cup graham cracker crumbs
  • 3 tablespoons sugar
  • 3 tablespoons butter melted
  • Filling:
  • 4 packages 8 ounces each cream cheese, softened
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • ¾ tablespoon vanilla extract
  • 4 eggs
  • 1 cup pumpkin puree
  • 1 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • Topping:
  • 1 cup heavy whipping cream
  • 1 cup powdered sugar
  • 1/2 teaspoon pumpkin pie spice

Instructions
 

  • Preheat the oven to 325 degrees.
  • Line 9×13 baking dish with no-stick foil.
  • In a small bowl, combine cracker crumbs and sugar; stir in butter.
  • Press onto the bottom of the prepared pan.
  • Bake for 10 minutes.
  • Cool on a wire rack.
  • For the filling, in a large mixing bowl, beat cheese, sugar, lemon juice, and vanilla until smooth.
  • Add eggs; beat on low speed just until combined.
  • Add pumpkin and spices.
  • Mix until well combined.
  • Pour over the crust.
  • Bake for 50-60 minutes or until the center is just set and the top appears dull.
  • Refrigerate for 4 hours or overnight.
  • After the cheesecake has cooled and you are ready to serve it, prepare the whipped topping:
  • Into stand mixer, add whipping cream, and beat on medium-high until soft peaks form.
  • Add powdered sugar and spice and mix until combined.
  • Spread over cheesecake.

Tips:
I like to double the crust for this recipe.
You can add chocolate syrup, and/or caramel syrup, and sprinkles on top of the whipped topping.
Cheesecake always tastes best the day after it is baked.
